Walnut Pumpkin Seed Bar

  1. Soak dates with boiling water if they are on the dryer side. Set aside for 15 minutes or longer and then strain out water. If you get the medjool dates from Costco, then there is no need to soak. They are the squishiest and the best dates!

  2. Prepare a 8 x 8” pan (or similar) and line with parchment paper.

  3. Combine nuts, pumpkin seeds and dates in a food processor.

  4. Blitz until well combined. The base should feel sticky. If its not sticky enough (ie. should be able to squish into a ball), add in another date or sprinkle in some water. On the other hand, if its TOO sticky, add in a couple more nuts/seeds.

  5. Transfer the mixture from the food processor into your pan and press evenly from corner to corner. Set aside.

  6. You can use a double boiler to melt your chocolate or heat in microwave in 20-30 second intervals. Be careful to not overheat and seize your chocolate. Going slower with low heat is less work in the long run I promise!

  7. Pour hot chocolate evenly over your base, use a spatula to help spread evenly as needed.

  8. Sprinkle some additional pumpkin seeds and sea salt to your desired taste! Enjoy!

Base:

1.5 cups walnuts (or any nut of your choice)

1 cup pumpkin seeds

1.5 cups of dates

optional: 1/2 tsp of cardamom, cinnamon or vanilla extract

Topping:

3/4 cup of dark chocolate chips

additional pumpkin seeds

sprinkle of sea salt
